THE INFLUENCE OF THE FOOD ADDITIVES COMPLEX ON THE REMODELING PROCESSES OF THE SMALL INTESTINE STRUCTURAL COMPONENTS AS AN IMPORTANT MEDICO-SOCIAL PROBLEM OF THE PUBLIC HEALTH CURRENT CONDITION IN UKRAINE

Food safety is attracting more and more attention around the world, as it has been found that there is a close connection between the consumed food and the state of health. The modern food industry is quite difficult to imagine without the use of food additives that improve the appearance and taste of food, extend their expiration date, and prevent rapid spoilage. Thus, the study of the effects of food additives on the human body as a whole and each organ separately is a very important issue for modern scientists and clinicians around the world. Our study aimed to analyze the literature sources of various scientific and metric databases, including Scopus and Web of Science, on the impact of food additives on the small intestine and to summarize the data. The most widely used food additives include sodium nitrite, monosodium glutamate, and Ponceau 4R. These supplements can lead to morphofunctional changes in various systems and organs, the most targeted they affect the gastrointestinal tract, in particular the small intestine. Although enterocytes use monosodium glutamate as a source of energy for metabolic processes, several studies have shown that excessive consumption of E621 can lead to disruption of the intestinal barrier and the course of inflammatory processes. Sodium nitrite, in turn, leads to the development of lymphocytic infiltration and stagnation in its plate and focal necrosis of enterocytes located in the apical region of the intestinal villi, and also disrupts physiological processes, in particular gluconeogenesis, which hurts metabolic processes. We found that food additives cause changes in morphological structure, physiological processes, and composition of the small intestinal microbiota and create conditions for further research, in particular in the future it is planned to investigate the effect of complex food additives on the morpho-functional state of the ileum.
