“Glutamate-induced obesity” is a relevant and interesting topic for discussion in the scientific community regarding health and nutrition. Monosodium glutamate is a food additive often used in fast, canned, and many convenience foods. Due to the increase in appetite caused by glutamate, people gain weight over time. This effect can be explained by the influence of glutamate on the central nervous system, especially on the tuber cinereum of the hypothalamus, as the latter is responsible for lipid metabolism. The study aims to analyse structural changes in the components of the nuclei of the hypothalamic tuber cinereum under prolonged exposure to sodium glutamate in the experiment. The study material is represented by microdissections of the hypothalamic tuber cinereum of two groups of white male Wistar rats weighing 218-260 g (intact and experimental). Histological sections were stained with hematoxylin and eosin, cresyl violet, a combination of cresyl violet and luxol, and silver impregnation, after which the microscopic structure of the components of the hypothalamic tuber cinereum was studied under the condition of 10 weeks of sodium glutamate administration in comparison with intact animals. The study’s results allowed us to describe the peculiarities of the cytoarchitectonics of the tuber cinereum and its micromorphological characteristics in control and experiment. After prolonged administration of sodium glutamate, the microscopic picture is dominated by neurons in a state of oedema, their single death is observed, and neuronal fragments are phagocytosed by glial elements (neuronophagy). Morphometric analysis showed a significant increase in the volume of both perikaryon and nucleus accumbens of the hypothalamic tuber cinereum. Conclusions. Long-term consumption of sodium glutamate causes profound structural changes in the nuclei of the hypothalamus.
